As part of the Blasta Book Series, Conor’s cookbook Wasted is all about changing the way we think about food by turning overlooked ingredients into delicious, plant-based meals that don’t cost the earth (literally). With decades of experience and a genuine passion for climate-friendly cooking, Conor brings both flavour and purpose to every dish.

This is not your typical supper club. It’s a joyful celebration of cooking with intention, creativity, and zero waste, hosted at GROW HQ, the home of plot-to-plate thinking.

Whether you're a seasoned sustainability nerd or just curious about how to waste less and eat well, this night will leave you fed, inspired, and ready to raid your fridge with fresh eyes.

About Conor Spacey

Conor Spacey is a renowned Irish chef and the Culinary Director of FoodSpace Ireland, where he leads a nationwide team in creating sustainable, zero-waste kitchens. With over 35 years in the food industry, Conor has transformed professional kitchens by championing local, seasonal ingredients and eliminating single-use plastics.

A co-author of the UN-backed Chefs' Manifesto, Conor collaborates with chefs globally to promote sustainable food practices. His commitment to reducing food waste and supporting local producers earned him the 2024 Blas na hÉireann Producers’ Champion award.

Beyond Ireland, Conor is spearheading the development of an off-grid cookery school and farm in The Gambia, aiming to create a circular economy that educates and empowers local communities. His book Wasted, part of the Blasta Books series, offers practical, plant-based recipes that make the most of every ingredient, turning potential waste into culinary delights.

We operate a 48-hour cancellation policy. If you cancel your booking at least 48 hours prior to the event you will be refunded. Cancellations made less than 48 hours prior to the date will not be refunded.
